How to make the fudge:

- Start by lining a small pan or baking dish with parchment paper or aluminum foil. Use a small pan; an 8×8″ (20x20cm) square is perfect. I have an old 10×6″ (25x15cm) rectangle that I use for this recipe, it’s a less common size but has almost the same volume as the 8×8 square.
- In a medium saucepan, melt your white chocolate over low heat, adding in the sweetened condensed milk just as the chocolate begins to melt. Stir until everything is smooth and melted.
- Once smooth, stir in your vanilla extract, cinnamon, ginger, and cloves.
- Add the powdered sugar and stir everything together well. If you have excellent arm strength, you can beat the fudge by hand with a wooden spoon until it’s thick and smooth. I find a stand mixer or hand beaters much easier for this step; whichever you use, make sure the fudge is completely creamy and blended together without any greasy streaks.
- Pour the creamy fudge mixture into your prepared pan, smoothing the top. It’ll be quite thick, that’s what you want.
- Gently press your broken Christmas sugar cookies into the top of the fudge, ensuring they are evenly distributed. You just need to press them down until they’re stuck in the fudge properly, don’t crush them right into the pan.
- Allow the fudge to set at room temperature or in the fridge until firm; this will take at least a couple of hours.

Easy Sugar Cookie Fudge
Ingredients
- 4 cups white chocolate good quality chopped bar; use chips if that's all you can get
- 14 oz sweetened condensed milk
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 3 tsp ground ginger
- 1 1/2 tsp ground cinnamon
- ¼ teaspoon ground cloves
- 1 1/2 cups sugar cookies or butter cookies broken up into pieces
Instructions
- Line an 8×8" (20x20cm) square pan, or 10×6" (25x15cm) rectangle pan, with parchment paper and set aside.
- Melt the white chocolate in a saucepan over very low heat. As it starts to melt slightly, add the condensed milk. Keep stirring regularly so the chocolate does not burn, until the mixture is smooth and melted.
- When the chocolate and condensed milk are melted, add the spices and vanilla to the mixture and stir well to incorporate. Remove the pan from heat.
- Stir in the sifted powdered sugar, then beat the mixture using a spoon, stand mixer or hand blender, until thick and smooth.
- Pour the fudge mixture into the lined pan. Gently press the broken cookies into the top of the fudge, then set aside in a cool place to set for at least 2 hours to firm up. If you live somewhere warm, you can put the pan into the fridge for an hour to speed things along.
- When the fudge is set, cut into small pieces and store in an airtight container at cool room temperature or in the fridge. If you want to store it for more than a week, keep the container in the freezer so the cookies don't turn stale.
