Assemble your ingredients for One Pot Coconut Chicken and Rice.
Heat oil in a large heatproof casserole. Brown the chicken thighs. Once brown, transfer the chicken to a plate, leaving the oil.
Add ginger and garlic to the dish and stir about 30 seconds. Then add the rice. Stir until coated with the leftover oil.
Mix in stock, coconut milk, pepper and bell peppers.
Return browned thighs to the one pot coconut chicken and rice, and cook. At the end of cooking, top with cashews, scallions and cilantro/coriander.
