Prepare all your ingredients for making the easy apple oatmeal muffins
In a large bowl, whisk together flour, sugar, baking powder and salt.
Add the apple chunks to the mixture and gently stir until they are evenly coated with the dry ingredients
In another bowl, lightly beat the eggs.
Add the oatmeal and mash with a fork to break up clumps. Then, add the milk and butter, and stir or whisk to combine.
Pour the wet oatmeal muffin mixture into the dry mixture, and stir to just combine.
Divide the apple oatmeal muffins batter evenly among the prepared muffin tin wells.
Bake for approximately 15 minutes or until a toothpick inserted into the center of a muffin comes out clean. Apple oatmeal muffins should appear lightly browned and well-risen.
