Hello, my Insiders!

Today’s feature recipe is a Mexican-ish street corn dip, made with steam-roasted corn and a creamy, tangy base that has a secret protein-packed ingredient hiding in it. Rather than bury the lede, I’ll let you in on it right here: the secret ingredient is blended cottage cheese. It sounds odd, but it makes the dip creamy and tangy at the same time, and heavier on protein than most dips. And, although I call it a dip, you’ll see in the recipe post that I use it as a side dish to all sorts of meals here.

From the Archives has a lineup of Mexican-style meals from the site that pair beautifully with the street corn dip, including an old recipe I made just this week that deserves a special shoutout. And in A Thing I’m Loving, I’m sharing a new-to-me food creator I think you’ll adore as much as I do.

Happy steam oven cooking, see you at the end of the month!

Mexican-ish Street Corn Dip

Mexican-ish Street Corn Dip
This dip has all the flavors of Mexican street corn: sweet, charred-tasting corn, a creamy, salty and tangy base, and plenty of punch. The steam oven roasts the corn so it stays plump and juicy with concentrated sweetness, which is exactly what you want to stand up to the creamy dip around it.

The secret ingredient in this recipe is blended cottage cheese, which gives the base a silky texture and adds a good hit of protein without anyone noticing. It’s an easy crowd-pleaser for sharing, snacking, or serving alongside dinner.

From the Archives:

Does the street corn dip have you in a Mexican food mood? Here are some steam oven meals that pair perfectly with it:

A fresh, vibrant option for warmer weather that’s lovely alongside the dip.

An easy meat-free dinner that works well with the corn as an extra taco filling/topping.

Hearty, simple, and made in one pan; serve big scoops of the corn dip on the side.

A special shoutout to this recipe. I made it this week using beef short ribs instead of my usual beef cheeks, and it’s what we’ve been eating with our latest round of street corn dip. Highly recommend, no matter which cut of beef you use.

A Thing I'm Loving

I have another foodie person to recommend to you! I don’t know Angie from Year Round Pantry at all, and I’m very new to her content, but she is a JOY, I tell you. A food blogger friend put me onto her last week, and people, we should all be following Angie.

Her website is full of gorgeous and detailed canning recipes, and here’s a little extra tip for you: all the water bath canning recipes on her site are transferable to your steam ovens! But the best thing about Angie is her new journey of putting her face in her Instagram videos. It’s sweet, hilarious, and so endearing to watch. I hope you find her as lovely as I do.

Ask Me Anything (AMA)

This is your best opportunity to ask me anything you like about steam oven cooking.

I answer some AMA questions via email, but my goal is to respond to more of them as articles on the Steam & Bake website. This makes the answers easier to search and refer back to when those same questions come up again. Whenever a new article is published in response to an AMA question, I’ll let you know here in our Insiders journals.

If you have a question, big or small, please email it to emily@steamandbake.com. Be sure to include INSIDERS AMA in the subject line so I can easily collect and review all submissions.
