Easter is just around the corner, so today we’re going to go with a second round of Easter-themed cooking content.
For me, Easter is as much about being around the table with people I love as it is about the food itself (although the food should absolutely still be delicious). I want to be relaxed and enjoy the four day weekend, so makes sense to lean on my steam oven for the heavy lifting when it comes to cooking – it means I get to spend more time at the table and less in the kitchen!
Today’s feature recipe is a proper centerpiece: a slow roasted lamb leg with gratin-style potatoes cooked underneath. It’s exactly the kind of ‘look at that!’ dish you can bring to the table with pride, but the hands-on time is blissfully minimal. The steam oven helps the lamb stay succulent while the potatoes quietly soak up all those pan juices – your oven is doing double duty, and you’re free to do…well, anything else.
There are a couple of great supporting dishes in From the Archives to round out your Easter table, including some very chocolatey options if you’re more interested in dessert than anything involving a roasting pan. Slow Roasted Lamb Leg with Gratin-Style Potatoes
This meltingly tender lamb leg with gratin-style potatoes underneath is designed with your Easter (or any special-occasion) table in mind. The lamb cooks low and slow in a humid environment so it stays tender and juicy, while the thinly sliced potatoes nestled underneath turn into a rich, silky gratin, infused with lamb drippings and aromatic herbs.
Everything happens in one pan, which means fewer dishes and a main course that more or less takes care of itself once it’s in the oven. Serve it with a simple green vegetable or salad and you have a complete, elegant meal with very little last-minute stress.

If lamb isn’t your thing, or you’re feeding a smaller crowd, this is a great time to lean on fish and dessert-forward menus. These older favorites would all be right at home on an Easter table:
Honey and Miso Roasted Salmon. A beautiful centrepiece fish dish that feels special but is surprisingly straightforward to cook. The sweet-savoury glaze is fantastic with simple greens and rice or potatoes.

Another Erin! A few issues back I talked about how much I enjoy Erin Jeanne McDowell’s work, and today I want to introduce you to a different Erin whose content I’ve followed for years: New Zealand-based blogger Erin Clarkson of Cloudy Kitchen.
Cloudy Kitchen’s recipes and photos are very special – the sort of bakes that feel both achievable and impressive – but my favourite thing about Erin might actually be her Instagram account. She shares hilarious reader comments, life updates, and plenty of very cute snippets of life with her five (!) cats, which makes her feed feel like a warm, slightly chaotic, very charming corner of the internet.
