Volume 71: Perfect Steam Baked Potatoes

Hello, my Insiders!

This issue’s featured recipe is one of those wonderful, simple things that turns out much better than it has any right to be. It’s a great case for showing how some everyday dishes really are far superior done in a steam oven.

Steam baked potatoes are the kind of side you can serve with almost anything, but they’re also good enough to stand on their own with a little butter and seasoning. I’m very fond of recipes like this because they seem ‘blah’ until you think about how often, and how flexibly, they can become the answer to dinner.

There are a few other potato dishes from the archives below; they really are a great food for steam ovens and there are countless ways to cook and serve them.

For those of you following along with my kitchen renovation project, I’m very close to finalizing all my new kitchen appliance decisions. I should have feedback on this to share with you in the next issue. There has been a lot of reading and research, and a lot of second-guessing, but I think I’m nearly there at last!

Perfect Steam Baked Potatoes

These are baked potatoes the way I always want them to be: fluffy, evenly cooked, and with skins that are properly salty and crisp. The steam oven does a brilliant job of helping the insides cook through gently while the outside finishes beautifully, so you get a really satisfying contrast of textures.

They’re a fantastic base recipe to have on hand because they work with so many different meals. Serve them with roast chicken or last issue’s outstanding dry brined chicken breast. Or perhaps grilled fish, steak, or make them the main event by splitting them open and loading them up with whatever you like. This is the sort of recipe that feels modest until you make it once and realize how much better it is than the conventional version.

A more decorative potato option that’s especially good when you want something pretty and equally delicious.

A classic comfort food version with all the creamy, savory satisfaction you’d expect.

A complete dinner that makes excellent use of the steam oven for a full, satisfying meal – the baked potatoes here are simpler than today’s, because they’re cooked with the other dishes. But you can always change things up and use today’s method with the meatloaf recipe! Just pull the meatloaf when it’s cooked and finish the potatoes in a dry oven.

A Thing I'm Loving

Not a cooking thing today, but a ‘use everyday’ work thing that many of us need! I’ve been looking at this affordable option for a new keyboard (aff. links). My old Logitech keyboard is on its last legs, and although it’s been good I’m reluctant to spend what it would cost to replace it with a new version. I figured there must be less expensive but still comfortable and nicely built keyboards out there, and it looks like there are plenty!

This option is well-rated and really cute, so I’ll be placing an order this week. I’m hopeful it will do the job, look good, and save me some money as well!
