Hello, my Insiders!

Today’s new recipes features cream cheese, lemons and pastry, three of my favorite things, and it goes down well no matter the weather or the occasion. I know it’ll be a popular addition to the ‘easy desserts’ repertoire many of us like to keep on hand.

Elsewhere, we’ll dip into the archives with the lowdown on steam oven puff pastry and, if that’s not puffy enough for you, the croissants from scratch that we covered several months ago here.

The season flip below has a couple of great shoulder season recipe options, and I’m sharing a thing I love in the form of muffin pans, after replacing my old, rusted ones a few weeks ago.

Croissants from scratch are kind of like an extension of puff pastry, so they’re a good fit here! They’re more complex, yes, but the reward of your very own homemade croissants is huge, and if you enjoy baking to impress, there’s not much that’ll make people love you more than a fresh croissant.

Southern Hemisphere

One of my enduring favorites from the book Jamie’s 15 Minute Meals, here I’ve reworked this delicious beef kofta for the steam oven. This dish is nourishing and comforting, and leftovers freeze really well too.

Northern Hemisphere

With my nod-to-retro recipe for steam oven meatloaf, fluffy baked potatoes, and buttery green beans, you can make a delicious multi-dish meal in one go. This meatloaf is miles better than any I had as a child (sorry, Mum!) and the meal comes together without any stress about timing, or juggling multiple appliances and various cooking methods.

A Thing I’m Loving:

I bake a lot of muffins in my house, maybe you do as well? We average a batch a week, for lunchboxes and after-school snacks, which means my muffin pans get a very good workout. Given this frequency, I’ve finally thrown away my rusted old pans, which were a mid-tier kitchen store brand purchase about 10 years ago (I think they’ve served us well!).

I decided to go all-in with the replacements and buy USA Pan muffin trays after using some of their other bakeware and becoming obsessed – their loaf pans and 9×12 trays are unbeatable for quality. They aren’t the cheapest, but I love using them and hope they’ll get me at least through the remainder of school years here (uh, that’s another twelve years, for anyone who’s counting. Definitely not me).

I note, for those of you as into pretty cakes as I am, that they also have a mini fluted cupcake pan that’s just gone straight onto my wishlist as well.
