Hello, and happy 2024!
I’m fresh off my annual family and friends camping trip, and boy is it nice to be back in my house, with all my modern amenities. And my steam oven! The simplicity of camping food is fun for a while, but I’m always happy to start cooking properly again when I get home.
Thanks to my little ‘brain break’ from recipes, I’ve got lots of new cooking ideas to share throughout the year; I feel privileged that I’ll get to do so with you.
Today’s newsletter topic is one I promised a while back. We’re getting more familiar with the temperature probe that comes with many steam ovens. I’ve got a cooking temps chart to download, and my top pointers for getting the most out of this oven accessory that nowhere near enough people make use of!
If your steam oven doesn’t have a temperature probe, don’t worry; you can make use of today’s information using an instant-read thermometer instead (there are links to a couple of my favorites below).
To reinforce the temperature probe topic, I’ve got a classic roast beef method for you, tweaked, of course, for the steam oven. It works with several different cuts of meat so it’s a great bit of knowledge and very adaptable.

Topic of Interest: Using your Steam Oven's Temperature Probe to Cook Meat (+ bonus meat temperatures downloadable chart)
Many steam and combi steam ovens come with a temperature probe as an accessory. They’re a very handy thing to have, but I’ve found over the years that they’re rarely used because many of you aren’t sure what to do with them.
Today we’re going to change that, and get you using the temp probe to cook perfectly done meat every single time!
There’s also a bonus downloadable chart at the end of the article, outlining the best temperatures to cook different meats to.
A simple method for classic roast beef in your steam oven. This will work with rump, topside/round, sirloin or tip roast.
Using an integrated temperature probe takes the guesswork out of knowing when it’s done, but if your steam oven doesn’t have one you can use an instant-read thermometer to check for doneness instead.

A Thing I'm Loving:
I couldn’t really share anything else today but an instant read thermometer! For those of you who don’t have a temperature probe included with your steam oven (and, actually, even for those of you who do), this is something I consider an essential piece of kitchen equipment. Sure, you can cook just fine without one, but it’ll become indispensable as soon as you try it.
A decent thermometer lets you quickly check the temperature of anything you’re cooking, whether it’s in the oven, on the barbecue or on the stovetop. I use mine for checking cakes and bread (it’s easier and faster than the oven’s temp probe for both), for making candy like fudge or toffees, and when we barbecue.
I use this one for general-purpose temp checks in the kitchen. My husband loves this fancy multi-probe arrangement for barbecue days; it’s not technically an instant-read but it’s great for keeping tabs on big joints of meat without lifting the barbecue hood all the time.
