Hello, my Insiders!

Today’s feature recipe is a proper treat: apple and cinnamon rolls with brown butter frosting, a mash-up of classic cinnamon rolls and apple pie. If you’ve ever baked my much-beloved overnight cinnamon rolls recipe, these are similar but taken a little further. They’re a bit of a project to make in terms of time, but quite straightforward, and a pan of warm sweet rolls is a beautiful thing to bring to the table for a special breakfast or brunch.

There’s plenty more apple inspiration in From the Archives – the Steam & Bake recipe index shows just how much I love cooking with apples, and I know many of you do as well because my apple recipes are always popular!

Happy steam oven cooking, see you in a couple of weeks.

Plush Apple and Cinnamon Rolls with Brown Butter Frosting

These rolls bring together two favorites in one dish: the soft, spiraled comfort of a classic cinnamon roll and the warm, spiced apple filling of a pie. Topped with a brown butter frosting that adds rich, nutty depth, they’re indulgent and special.

There are a few components to bring together here, but it’s not a difficult bake if you set aside a little time. If you prefer, you can do the making and assembling of the rolls right up to the second prove, then put them in the fridge overnight for freshly baked rolls the next morning.

The combi steam function is ideal for baking these rolls, keeping the dough soft and tender while the rolls cook through evenly.

From the Archives

Apples are a real favorite of mine in the kitchen, and my recipe index proves it. Here’s more apple inspiration to explore:

Combi Steam Oven Apple Tarte Tatin

A classic French dessert that never fails to impress. This was one of my earliest-published recipes on the site and it’s such a beautiful show of what combi steam can do with a few apples and a bit of pastry!

Easy Apple Roses with Puff Pastry

A very pretty way to showcase apples, from an earlier Insiders issue.

Apple Crumb Cake with Cinnamon

Simple crumb cake gets an upgrade with spiced apples; this is a lovely sturdy but tender cake that’s perfect for lunchboxes or picnics.

Pork and Apple Sausage Rolls

A recent Insiders recipe, perfect for a savory take on apples and pastry.

A Thing I'm Loving

One of my two plum trees has just put out its first blossoms of spring, remarkably early thanks to how warm this winter’s been here. It’ll be months yet before there’s any actual fruit to eat, but those little blossoms have me craving bright, juicy stone fruit already.

What I really want to make with my nonexistent plums is this plum and mozzarella salad with serrano-lime dressing from NYT Cooking. It is firmly on my list for the moment they are actually in season here – for those of you in peak plum season now, get to it!

Ask Me Anything (AMA)

This is your best opportunity to ask me anything you like about steam oven cooking.

I continue to answer some AMA questions via email, but my goal is to respond to more of them as articles on the Steam & Bake website. This makes the answers easier to search and refer back to if the same questions come up again. Whenever a new article is published in response to an AMA question, I’ll let you know here in our Insiders journals.

If you have a question, big or small, please email it to [email protected]. Be sure to include INSIDERS AMA in the subject line so I can easily collect and review all submissions.
