Prepare the ingredients for your vegan lentil soup recipe. This is an Arabic staple soup known as Shorbat Adas. 

In a pot over medium heat, sauté chopped onion, carrot, and celery until they soften.

Add garlic and spices, sautéing and stirring until your vegan lentil soup base is fragrant and soft.

Mix in tomato puree or chopped tomatoes.

Add lentils and rice to the vegan lentil soup, stirring to coat them in the onion and spice mixture. Rice gives extra body to the soup.
