Easy Mini Pecan Pies

Put the pastry ingredients into a food processor.

Process just until it comes together.

Place the mini pecan pie dough onto a floured surface for kneading.

Split pastry in half and form each half into a log.

Chill in the refrigerator after wrapping in cling film.

Put eggs, sugar, spices, salt and bourbon into a jug.

Whisk with a fork to combine well.

Slice each pastry log into 12 thin discs.
