Panforte di Siena with ginger, apricot and macadamias

Prepare the ingredients for making your Siena Cake (Panforte di Siena)

Combine chocolate and honey in a pan over low  heat.

Stir frequently until the chocolate melts and the mixture becomes smooth.

Combine the flour and spices in a bowl and whisk to combine.

Add the fruits and nuts to your panforte di siena, then stir to coat them evenly with flour.

Add the chocolate and honey mixture to the bowl and stir well. The Siena cake mixture will be very thick.

Spread the Siena cake mixture evenly in the cake pan, pressing gently to create an even layer.

Bake until golden but soft, about 45 minutes. Cool completely in the pan, then wrap and store up to 3 months to mature.

Dust panforte di Siena with powdered sugar and cut into thin wedges. Serve your Siena cake and enjoy!
