Prepare all the ingredients for making the Pumpkin Cheesecake.
Combine the pumpkin puree, sugar, and spices in a pan and cook.
When the puree is cooled, put in a food processor. Add salt, cream and cream cheese, and process until everything is smooth.
Add the eggs and process again, but don't overmix.
Mix the cookie crumbs, sugar, and melted butter, then press onto the bottom of your cake pan.
Bake for 12 minutes, then remove from oven and set aside to cool.
Pour the pumpkin cheesecake filling over the baked and cooled base and cover the pan with a layer of aluminium foil. Steam for 2 hours.
Cool Pumpkin Cheesecake before serving with crème fraiche, mascarpone or whipped cream.
