Start your sous vide spatchcock chicken by preparing a whole fresh chicken.

Remove the chicken's backbone by cutting along each side.

Remove the backbone from the chicken; you can save it to make stock later.

Flip the chicken, skin side up, and press down firmly on the breastbone to flatten it.

Rub the sous vide spatchcock chicken with oil, salt, pepper, and garlic powder.

If using a water bath, vacuum-seal the sous vide chicken in a bag. For steam oven sous vide, just pop it onto a tray.

Cook the sous vide spatchcock chicken in a steam oven or water bath. Crisp the skin under a broiler or grill.

Let the chicken rest in a warm place for 10-15 minutes. Carve and enjoy your juicy sous vide spatchcock chicken!
