To start your mini steamed Christmas puddings, soak fruit and almonds in brandy, cover, and let it sit overnight.

A day before...

Cream the butter, sugar, orange rind and juice until light and fluffy.

Add the eggs to the pudding mixture one at a time, beating to incorporate each one before adding the next.

Incorporate the flour and spices into the butter mixture, mixing just until combined.

Combine the breadcrumbs and soaked fruit for the mini steamed Christmas puddings, mixing until well incorporated.

Divide the mixture evenly into a muffin pan or individual pudding moulds, lined with parchment paper.


Cover the mini Christmas puddings with parchment paper to fit.


Cook mini steamed Christmas puddings for 1½ hours, then remove and cool. Wrap and store puddings in the fridge until needed. 


Mini steamed Christmas puddings can be reheated by steaming or in a microwave. Serve with brandy butter or custard.
