Cut and cube all the vegetables. You can choose other vegetables like mushrooms, squash, eggplant or zucchini for variations.
In a bowl, mix the chicken with olive oil, lemon juice, balsamic vinegar, oregano, paprika, scallion, garlic, salt, and pepper. Combine well and refrigerate for 20-30 minutes.
On a baking sheet, toss the potatoes and peppers with extra olive oil. Season with salt and black pepper.
