Prepare ingredients for making your gluten free chocolate cake. This cake is flourless, nut and grain free, and so luxurious to eat!
Prepare a 22cm/9in springform pan by greasing it with butter and lining it with baking paper.
Melt butter and chocolate in a heatproof bowl over simmering water, avoiding direct contact. Heat gently.
Melt butter and chocolate until smooth, then cool briefly until lukewarm.
Whisk egg yolks into the cooled chocolate-butter mixture for your gluten free chocolate cake.
Add cocoa, salt, and vanilla; whisk to combine.
Whisk egg whites in a stand mixer until soft peaks form.
Reduce mixer speed to medium and gradually add sugar, whisking until glossy, stiff peaks form.
Fold a quarter of the egg whites into the gluten free chocolate cake mix to loosen.
Gently fold remaining egg whites in until no streaks remain.
Pour gluten free chocolate cake batter into the prepared pan, smooth top, and bake until set with a thin crust.
Cool the cake completely in the pan before removing and serving. It will sink, that's normal!
