Creamy, Oven Baked Chicken Meatball Curry

Have all the ingredients prepared for making this flavor-packed oven baked chicken meatball curry. It's a great family dinner.

INGREDIENTS

Combine ground chicken, breadcrumbs, cilantro, chilli, garlic, and curry powder in a bowl. This is your oven baked chicken meatball mixture.

MAKE MEATBALLS

Mix everything together until the ingredients are well-combined. Using your hands is easiest!

MIX WELL

Shape the meatballs into tablespoon-sized balls and and place in a shallow baking pan.

SHAPE

Brown the meatballs for about 12-15 minutes, then take them out of the oven ready for the sauce.

COOK

While the chicken meatballs cook, begin the oven baked curry sauce by adding oil, onion, ginger, and cilantro to an ovenproof dish.

MAKE THE SAUCE

Put in the oven until the onions are softened, about 6 minutes.

Add curry powder to the pan and give everything a stir. Curry powder in your meatballs and sauce makes for a more flavorful chicken meatball curry.

Continue cooking for 3 more minutes to toast the spices.

TOAST THE SPICES

Add tomato puree, water, and coconut cream to the oven baked meatball curry sauce. Place back in the oven.

When the meatballs are cooked, add to the sauce. Cook until the meatballs are thoroughly cooked and the curry sauce thickens.

ADD COOKED MEATBALLS

Serve your oven baked chicken meatball curry with fresh cilantro and steamed rice or naan bread. Yum!
