activate the yeast

Kick off your classic hot cross buns dough by combining yeast, milk, and a teaspoon of sugar in a small bowl.


In the bowl of a stand mixer, mix together flour, sugar, spices, salt, egg, water, butter, and the yeast mixture.

Start mixing to incorporate the ingredients, then continue until the dough turns elastic and smooth.

ADD DRIED fruits

Hot cross buns with fruit need lots of chunky dried fruit pieces! Add the fruits into the dough, mixing until combined.

prove the dough

Form the classic hot cross buns dough into a ball and let it proof, covered, in a warm spot until it has doubled in size.

divide into portions

After the first proof, gently knock down the hot cross bun dough and divide into even sized portions.

Transfer the cross mixture into a piping bag or a small sandwich bag, then snip off a corner or the end.

pipE crossES

Pipe lines across each bun to create a "+" on top. They're not classic hot cross buns with fruit unless they have their signature crosses!


Bake hot cross buns according to the recipe, (I include instructions for both a steam oven and a conventional oven).


Prepare the glaze while the hot cross buns are baking, and brush it over the tops immediately after they come out of the oven.

Classic hot cross buns with fruit are amazing served warm with butter. They're also super tasty toasted the next day!
