Chocolate self-saucing pudding bakes in one dish for a layer of soft chocolate cake over luscious, silky chocolate sauce—
Prepare the batter and sauce ingredients for making the self saucing chocolate pudding recipe.
In a bowl, whisk together brown sugar, cocoa powder and salt for the sauce. In another bowl, whisk flour, baking powder, granulated sugar, cocoa powder, and salt.
Combine melted butter, milk, egg, and vanilla in a small jug, whisking until well blended.
Pour the egg mixture into the flour mixture and mix with a spatula until combined.
Pudding batter will be very thick, which is normal.
Spread the chocolate self saucing pudding batter evenly in your baking dish and smooth out the top.
Sprinkle the sugar and cocoa mixture over the batter, then gently shake to even out the layer.
Pour boiling water gently over the pudding using the back of a spoon to cover the entire top surface carefully.
Bake in the oven until the top springs back lightly when touched and the underneath is slightly jiggly, approximately 20 minutes. Avoid overbaking to retain the sauce.
Remove from oven and let it stand for 2-3 minutes, then serve immediately, scooped into bowls with cream or ice cream on top.
