Hello, my Insiders!

Today we’re talking about breakfast, namely baked oatmeal. If you aren’t familiar with the concept, think of it as somewhere between regular oatmeal and a muffin, but also its own special kind of dish altogether. It’s a great fiber- and protein-rich batch breakfast, and you can make it well ahead of time, ready to grab and reheat or grab and go on busy mornings. It’s excellent in the steam oven, where combi steam makes it come out creamy and soft underneath, with a golden brown, chewy-crispy top.

New to Cook

Blueberry and pecan baked oatmeal is an easy, wholesome breakfast that’s perfect for busy mornings. It’s packed with rolled oats, juicy berries, crunchy nuts, and just the right amount of sweetness. Baked in your steam oven, it comes out soft and tender, with a lightly golden top and plenty of flavor in every bite.

Should I Make It?

A new and occasional journal segment!

Frequently, I come across dishes I think would be great for combi steam adaptation, and those go onto my loooong list of ‘recipes to try’. From that list, I develop a lot of recipes I’m confident will be popular with most of you.

But then there are the other recipes; ones which, for one reason or another I think could be great, but which I’m not sure will be popular enough to warrant multiple tests and many hours in the kitchen. Often, these are more complicated or time consuming recipes, the kinds of projects an enthusiastic cook would take on over a weekend.

Rather than continue adding those dishes to my list and leaving them there, I’m going to start asking you, should I make it? We’ll have a little poll, and if enough of you vote for something, I’ll give it a try and share the results (and hopefully a recipe!) in a future journal issue.

Southern Hemisphere

These have been on my site for years, and if you haven’t made them but you love a protein-packed breakfast that can be eaten warm or at room temperature, this is your gentle nudge to give egg bites a try! They can be varied in so many ways, from a light egg white and cottage cheese version to a silky, rich cheese and cream version, with all manner of different flavors to shake things up.

Northern Hemisphere

Softly poached dried fruit is something my Mum made often when I was growing up, so I feel a nostalgic kind of love for it. I also love that it’s a brilliant dessert-or-breakfast crossover with minimal variations to swing it one way or the other (add rum and serve with ice cream for dessert; use orange juice and add yogurt or oats for brekky!). As a breakfast, I love serving it with my steel cut oatmeal (pin head oatmeal, for US dwellers). Make a batch of oats and batch of fruit and you’ll have luxurious but easy breakfasts all week long.

To make this dried fruit compote in your steam oven: 

  • Prep it exactly as written. 
  • Instead of simmering on the stovetop, put it (uncovered) into your steam oven, and steam at 212F/100C (100% humidity) until the fruit is plump and soft. 
  • The timing will vary widely depending on what fruits you use and how dry they were, but anything from 20-40 minutes is to be expected.
